Joy's Poached Pear and Almond Tart

Edit (May 2020): Joy has since left for Paris and returned, worked as a pastry chef in a fancy restaurant and then set up her own business: Patisserie ClĂ© . She still makes this tart and it's available for pre-order, amongst many other yummy things. Can you tell I'm really proud of her? 

It's one thing to make a dessert look pretty, but another set of skills to make it taste as good as it looks. In fact, I often find that nothing soothes a sweet tooth quite like an ugly dessert. Just look at tauhuay. Who knew blobs of soybean pudding drenched in a clear sugar syrup would become such a perennial favourite? 

When I discovered my fellow intern Joy's instagram account for her baked goods, I was truly impressed. So I got her to bake this poached pear and almond tart for Father's Day two weeks ago and the rest you can say is history. It really does taste as good as it looks.

That night I whipped up a feast for my dad (honey soy wings, pasta tossed in lemon oil and herbs, bacon enoki skewers and rosemary roasted vegetables), and after the meal I pulled this out of the fridge and presented it to the fam. I wish I could have claimed credit for baking it but alas, God gave me skills with the stove and not the hand mixer.


I am both proud and ashamed to say that I alone ate half the tart.

IT WAS THAT GOOD GUYSSSS. Once again I'm not being biased just because Joy is my friend. I paid her for the tart, she didn't pay me for this post.

The pears were thinly sliced and slightly spiced by cinnamon, the almond cream subtle (no fake almond flavours for me thanks), the pate sucree so fragrant that I could smell it the whole time I carried the box from Orchard to home. It tasted wonderful both with a dollop of vanilla ice-cream and without (since I ate it twice lol).

Since then I've encouraged Joy to set up her own homepage to sell her goods, and I told her I'd design her name card and collaterals in exchange for more cake.

  1. This sounds totally delicious. I love pears and almonds and the combo seems wonderful. I am blind so cannot see the picture but I'm convinced it looks great too.
