Mini Bundt Earl Grey Cakes

Today I walked home feeling a little restless and blue - I didn't feel like idling the day away, yet heading out didn't seem like a good idea given the heat.

It suddenly struck me that I had flour, sugar and milk to use up, and a brand new mini bundt pan I'd yet to try out. I considered making chocolate chip mini bundt cakes, but that idea bored me even before I reached my door step. So when I got home, I scanned the larder for anything else I could use.

Joy's Poached Pear and Almond Tart

Edit (May 2020): Joy has since left for Paris and returned, worked as a pastry chef in a fancy restaurant and then set up her own business: Patisserie ClĂ© . She still makes this tart and it's available for pre-order, amongst many other yummy things. Can you tell I'm really proud of her? 

It's one thing to make a dessert look pretty, but another set of skills to make it taste as good as it looks. In fact, I often find that nothing soothes a sweet tooth quite like an ugly dessert. Just look at tauhuay. Who knew blobs of soybean pudding drenched in a clear sugar syrup would become such a perennial favourite? 

When I discovered my fellow intern Joy's instagram account for her baked goods, I was truly impressed. So I got her to bake this poached pear and almond tart for Father's Day two weeks ago and the rest you can say is history. It really does taste as good as it looks.
