Sunday Squares: Stuffed Peppers at Mambo no. 5



This Sunday was absolutely perfect - went to church with my flatmates kayla and elizabeth, then came home and prepared stuffed peppers together for brunch. 


I said I'd talk a bit more about my accommodation in Warwick and how else better to do it than with a lovely Sunday in? In case you're wondering, our house and its inhabitants are nicknamed after mambo no. 5 because that's our house number.  I live in Whitefields, a cluster of little houses right in the centre of campus. It's the cheapest hall on campus and one of the oldest but I cannot tell you how blessed I am to be here. 

Reasons I love Whitefields:

1. IT'S CHEAP. I mean not like NTU hall cheap, but still. I'm paying 81 pounds a week which is dirt cheap compared to halls in London and almost half the price of the most expensive halls in my uni. 

2. My room is huge for what I'm paying. I've been to a few other halls here, nobody's room is as big as mine. I didn't bring much shit over but the extra floor space means I can exercise (or at least lie about it). 

3. 12 people from 5 countries in a tiny house - I'm forced to socialise instead of seeking out Singaporeans only, and honestly I've realised we all have more in common than we think. My worries about not fitting in dissipated within the first week when I heard Beyonce blasting in the common room.

Now back to the stuffed peppers. 

I snapchatted our cooking adventure this afternoon (follow me @jiahantong) and got so many excited replies. "what r u making? where r u? who is dat?". I'm going to share a basic recipe for what we made today but feel free to modify based on what you have. The only essential ingredients you need are canned tomatoes and the peppers, everything else was just what our trio had to spare. Measurements are very approximate because we grossly overestimated the amount of stuffing we needed and had leftovers.

Stuffed Bell Peppers

Ingredients

5 Bell Peppers, halved and emptied (aka capsicum) 
1 cup carbs (rice/cous cous/lentils/quinoa are fine)
1 cup courgettes and broccoli, chopped finely
1 can tomatoes
1 cup any shredded cheese
4 slices of back bacon 
1 stock cube 
salt and pepper to taste

Preheat oven to 180 deg celcius.

1. Cook the carbs with canned tomatoes, stock cube and water. You can also use liquid stock in place of water.
2. Continue to simmer until the carbs are almost fully cooked and add in vegetables and bacon.
3. Stir occasionally until all ingredients are fully incorporated.
4. Spoon stuffing into bell peppers and sprinkle liberally with cheese.
5. Pop into oven for 5 minutes or until cheese turns brown. 
6. Remove from oven and serve hot.

I'm feeling hungry again just thinking about what a delicious and healthy lunch that was. It's so versatile and definitely will be something I'll make a lot back home. All in all, I love my time here at Whitefields and the flatmates who've been absolutely lovely to me. Even full time Singapore students in Warwick are surprised by how well I've been getting along with my flatmates for the time I've been here. 

It's ridiculous that I'm almost half done with my term here in Warwick, and I know for sure I'll miss this little house and its people so much when I leave. Hope you guys have a great week ahead!
